Love eggs? Love toast? Try my Egg in a Hole. This recipe is also known as egg-in-a- basket, egg-in- a- nest and birds-nest-egg. Whatever! It’s just a simple and fun way to serve yourself up a quick, healthy breakfast.
Please don’t leave home without eating breakfast. Protein is the key to staying full longer. Eggs provide one of nature’s most perfect proteins. Yolk and all! I am a hug advocate of eating the WHOLE egg, not just egg whites. The yolk contains nutrients like copper and selenium important for immune health, plus many B vitamins and vitamin A. Don’t worry so much about the cholesterol, science is showing that eggs have no effect on overall blood cholesterol levels.
- One slice whole wheat bread
- 1 tablespoon butter
- 1 large egg
Tear a hole in the middle of the slice of bread. Best way to do this is to fold the bread in half and tear out a half circle. Do you remember cutting out valentines as a kid? Like that!
Now heat a medium size skillet over low heat. Butter one side of the bread.
Place the slice of bread (butter side down) in your skillet and crack the egg into the hole and season with salt and pepper, and cook until golden brown underneath. Oh, just about 2 minutes.
Then flip it over. Cook for one more minute if you want your egg runny. Or longer if you want it firm.
