When I say “date shake” what comes to mind? Do you scrunch up your face and say yuck, that can’t be good. Or do you grin because you’ve stopped at Hadley’s on the way to Palm Springs and know just what I’m talking about. Southern California’s Coachella Valley has been growing dates for over a century, nearly 95% of the nation’s crop. Only recently did I discover how wonderfully sweet this desert treat really is. Insanely sweet.
When Recipe ReDux asked members to share a no-cook dessert, I immediately thought of this Creamy Dreamy Date Shake. That is if you don’t count using a blender as cooking. It’s a super easy, super tasty way to consume this superfood which provides a source of energy, fiber, vitamins and minerals. So get out your blender and whip up a date shake to get you through a long study session, or a hot Indian summer afternoon, or maybe share with your special someone on a date!
- 5 to 6 dates, preferable Medjool
- 3/4 cup nonfat or lowfat milk
- 2 cups vanilla nonfat frozen yogurt (or vanilla ice cream)
- 1 teaspoon vanilla extract (optional)
- 5 ice cubes
Step One: Chop and soak the dates
Remove pits from dates and coarsely chop. Place chopped dates and milk in the blender’s container. Cover and refrigerate until the dates have softened, about 15 minutes. This helps make them easier to blend smoothly.
Step Two: Add ingredients and blend
Place blender container back on base and blend on high speed until smooth. Add frozen yogurt and vanilla extract. Blend on low speed until well mixed. Add ice and blend until smooth and frothy.
Step three: Serve
Pour into tall, chilled glasses and enjoy. To make it extra special, top with whipped cream.
