My new found love…wheat berries.  Did you know this is the actual wheat grain seed that mills grind into whole wheat flour? This whole grain is similar to brown rice in that it takes a long time to cook–close to an hour. But unlike brown rice, its rich in flavor, and has much more  nutrients and fiber ( 8 g per serving!) Whole grain at its best!  You can usually find wheat berries at produce specialty markets or natural markets around the country.
Ingredients:
  • 1 ½ cups Wheat Berries
  • ¾ cup chopped walnuts or sliced almonds
  • 1 green apple, chopped
  • ½ cup dried cranberries
  • ¼ cup green onions, chopped
  • ½ cup parsley leaves, chopped
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • Salt and pepper to taste

Its so easy.  Here’s what you do….

In a large pot add wheat berries and enough water to moce to 2 inches over the top of the berries. Bring to a simmer and cook uncovered for one hour.  Drain in a strainer and let cool.

Toast the walnuts or almonds in a dry skillet on the stove until they are lightly browned. Stir constantly.  Remove from heat (about 3 minutes). Be careful not to burn them so don’t walk away from the stove. Just keep stirring!

In a medium bowl, combine all the ingredients together. Season with salt and pepper to taste.
