I made these roast beef french dip style sandwiches for dinner on a hot night when I didn’t want to cook. So easy, so delicious. I paired the sandwiches with big, ripe strawberries from the farmers market. Heaven! Just buy a few slices lean roast beef and provolone cheese from the service deli of your grocery store and a few hoagie rolls. I love grocery service deli’s because you can buy just what you need, not a huge package. Saves money!
Ingredients:
- 1/2 (10.5 ounce) can beef consommé
- 1/2 cup water
- 1/2 pound thinly sliced deli roast beef
- 4 slices provolone cheese
- 2 hoagie rolls, split lengthwise
Step 1: Add the beef consommé/broth and water to a pan and heat to a simmer. You can also buy a package of Au jus mix and add water if you wish. Both ways are easy
Step 2: Add the sliced roast beef to the pan to warm the meat.
Step 3: Top each roll with the warmed roast beef and two slices of cheese. Ten place in the toaster oven or under a broiler for 2 minutes to melt the cheese.
Serve with a side of warm beef consumme to dip the sandwich. Perfect with a side salad or fresh picked strawberries!
