Don’t put away that slow cooker quite yet! Use this recipe when its too hot to turn on your oven. This meal is the most tender chicken dish you have ever tasted with just the right amount of lemon and garlic flavor.  Just throw everything in the pot and come home with the main meal ready to go.

I like to brown or sear the chicken before I add it to the slow cooker, but it doesn’t make a huge difference if you don’t. It tastes the same but the searing gives it a more golden color.

  •    1 package of chicken drumsticks (about 6 total)
  •   1 tablespoon vegetable oil
  •    3 tablespoons chicken bouillon powder
  •    10 cloves garlic (or more if you like garlic)
  •    Juice from one lemon
  •    3 tablespoons Worcester sauce or soy sauce
  •    2 sprigs fresh thyme or 1 teaspoon dried
  •    2 Tablespoons water

Step 1: Wash and pat dry the chicken.  In a hot skillet, add the oil and brown the chicken on both sides for about 5 minutes total.

Step 2: Remove the chicken and add it to the slow cooker. Sprinkle the chicken pieces with the chicken bouillon. Then add peeled garlic cloves, lemon juice, Worcester or soy sauce, thyme and water. You can also throw in the juice rinds but only add one half a lemonas they can become bitter after cooking.

Step 3: Place the lid on the slow cooker and cook on high heat for 4 hours. (no longer than 6 hours)

Step 4: Remove chicken from the slow-cooker and save the juice and serve on the side The garlic cloves cooked with the chicken make an excellent spread. Just mash the softened garlic with a bit of salt, and serve right on top of the chicken or on slices of  bread.  We couldnt get enough of the garlic!

Don’t forget to make a vegetable side dish and some brown rice to complete the meal too. Enjoy!  Heidi
