Definitely hit paydirt on this chicken taco recipe that I found on My Chocolate Therapy.  It couldn’t be more simple, easy and versatile.  I’ve made it twice already – we’re beyond quality control and are now just enjoying having it in the refrigerator ready to fix for a quick meal.  My son is in a school production all this week and this is what he’s been eating before heading off to hit the stage.  He tops his tacos with just cheese and lettuce.  I like to load mine up with salsa, avocado chunks, cilantro and a squeeze of lime.  Yum!

Ingredients:

3 chicken breasts

1 package taco seasoning

1 jar (16 oz) salsa

 

Yep!  That’s it!  Budget-friendly to the max.  And this is how simple it is to make:

Step 1:  Put the chicken breasts in the slow cooker.

My slow cooker is so ancient!  It’s got to be at least 20 years old.  But it still works perfectly so I  can’t justify buying a prettier one.  A great investment, that’s for sure!

Step 2:  Mix the salsa and taco seasoning together. 

I didn’t want to wash any extra dishes, so I did this right in the jar.  So lazy.

Step 3:  Dump the salsa/taco seasoning over the chicken breasts.

Step 4:  Set your slow cooker on low and walk away from it for 6 to 8 hours. (You could also set the slow cooker on high for 3 to 4 hours.)

Walk awaaaaay from the slow cooker.  This thing has definitely seen better days.  So embarrassing.

Step 5:  Shred the chicken with two forks.

This is so easy!  The chicken just comes apart.

Fill up a corn or flour tortilla with the chicken and add your favorite taco toppings!

This keeps in the refrigerator really well.  It would freeze well too.  You could actually double the amount of chicken breasts (6) and use the same amount of salsa & taco seasoning mixture.  Have a taco party (have everyone bring a different topping) or put part of it in the freezer to enjoy later.

Kitchen Tip:  Here’s a hint if you decide to freeze it.  Put the shredded chicken in a resealable bag and press it all down so it’s nice and flat.  Takes up less room in your freezer and it’ll thaw quickly.
